All our beef is sourced from Klamath Falls Ranch in Klamath Falls, Oregon. They raise 100% organic Wagyu beef which is always sent to us fresh and never frozen. Wagyu refers to several specific breeds of cattle that produce a huge percentage of unsaturated fat. This beef is reknowned worldwide for the unique marbling characteristics that enhance natural flavor, tenderness, and juiciness, making it highly prized and in high demand.
